Thankful Thursdays-Love Wins


It's the last Thursday of the month, so it's time for our new link up Thankful Thursdays. Holly can't be part of this month so I am flying solo on the hosting gig. So happy you can join us.

I have been thinking about this topic a lot and today it is taking a different tone that I thought it would originally. Over the past year, I have felt that my heart was more full but had more capacity at the same time. For some reason I feel like I can and want to love deeper and bigger. Not just for the loves in my house and my family but also for those around our community and my friends. I can't quite put my finger on why I feel this way, but I do.

Why hello end of February--when did you get here? It's the last Wednesday of the month so I am linking up with Shay and Schaeffer for What's Up Wednesday to share what is going on in the Good Better Best world this month. 

What We Are Eating This Week

It is going to be a busy week around here with work work, school work and just general business. I don't really have a formal meal plan this week because of this, I basically have a bunch of Good easy food available. This includes:

-Grilled cheese making
-Turkey meatballs for easy meatball subs or just for heating up
-Possible sheet pan fajitas
-Amylu chicken burgers
-Plenty of fruit and veggies to cut up

Get Ready to Talk About Love


Happy Friday! I don't have a real Friday Favorites today because I am putting all of my creative energy into coming up with ideas with my girls for our table for the school auction tomorrow night. 

Today is just a quick post today to remind my fellow bloggers and readers that coming up this Thursday, February 28 is Thankful Thursday with Patty and Holly. For February we are focusing on all kinds of love. Love for your true love, your kids, your family, your besties, your work family, or your furry friends...it all counts for this one.

Friday Favorites: Best Gel Polish, Beverly Hills Housewives and Goat Yoga

Happy Day after Valentine's day. I hope your day yesterday was sweet and filled with love whether it was your true love, your kids, your girlfriends or you furry friends. Today I am shaking off a long week and linking up with ErikaAndreaNarci and The Blended Blog for my weekly list of Friday Favorites. Let's do this.

1) Orange Cranberry Mini Muffins


This week I posted these Orange Cranberry Mini Muffins for Tasty Tuesday. These are so Good and I have been making them every week for the last couple of weeks. A perfect hint of orange and the yogurt in the recipe keeps it moist. Did I mention that I made these gluten free with King Arthur gluten free flour? And that two of these are 6 WW points...which is pretty low for a muffin?

Tasty Tuesday: Orange Cranberry Mini Muffins


I love muffins. I typically have a muffin every morning as my breakfast because I leave the house so early and it's easy to have during my commute. I have been trying to lighten up a little bit over the past few weeks, so I worked on this Orange Cranberry recipe and it is so Good. The orange zest give it such a fresh flavor and the vanilla yogurt keeps the muffin moist.

1 cup all purpose flour (I used the King Arthur Gluten Free Flour)

1/2 cup sugar

1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 egg white

6 oz low fat vanilla yogurt (I used Yoplait)

1 Tbs canola oil

1/2 medium orange

1/4 cup dried cranberries

Preheat oven to 350 degrees. Spray a mini muffin pan with non-stick spray or use paper liners. 

Combine flour, sugar, baking powder, baking soda and salt in a medium bowl. In a separate, small bowl, whisk together egg white, yogurt, and oil. Zest the orange into the bowl and then give a good squeeze of the orange into the bowl.

Combine the wet and dry mixture but do not over mix. Add cranberries.

Spoon batter into each muffin tin about 3/4 full. Bake about 12 minutes until a took pick comes out clean.

These can also be made into regular size muffins. You should bake for about 15-20 minutes for regular size.

These are about 6 WW points for two.

To make Better use one element of organic flour, yogurt, oranges or cranberries. To make Best use multiple elements of organic flour, yogurt, oranges or cranberries. These are so Good with a cup of coffee in the morning.
