Friday Favorites: April 28

Today I am linking up with ErikaNarci ,  AndreaAmanda, Bright on a Budget, Della Devoted, Cup of Tea and By BMG for Friday favorites and sharing with you the things that I am finding Joy in this week.

1) J. Crew Factory Jackie Cardigan: Coming home from our Easter Break trip we made a quick stop at the outlets, basically just to Vineyard Vines and J Crew. I picked up two of the Jackie cardigans as they were on major sale and I need a couple of classic cardigans to round out my spring wardrobe. I chose the bright green and also the pink. I wrote the bright green over a sleeveless dress for work yesterday and it was the perfect pop of color.

Workin' It: Spring Cleaning During a Home Remodel

Today I am linking up with Shay & Erika for their Workin' It series. This month the topic is Spring Cleaning Tips. I mentioned in in last month's link up that due to working full time and my health issues I do typically have help in the cleaning department. Since we are smack dab in the middle of our home remodel,I have not had our cleaning team come, because who can clean a construction zone?

Good Better Best Holiday Flashback-Easter and Passover

With Easter one week away ( I can't wait) and Passover happening right now, I wanted to flashback to the recipes and wine reviews that I did a few years ago.  The rack of lamb is perfect if you are only having a few people over and the brisket is spot on for beginners like myself.

The wines paired in these posts are perfect whether you are hosting or lucky enough to be an invited guest.  Need some white wine ideas? Check out this this post from January on Budget Friendly White Wines

Enjoy the Best food and wine.  Happy Spring!

Chicken sausage with spinach and toasted polenta

This fast and easy weeknight recipe is budget friendly.  Light and packed with flavor it gets even yummier with Good Better Best!

Good Recipe
2 cups fresh baby spinach
1 lb chicken sausage-hot or mild, I used mild
4 Roma tomatoes
1 roll of prepared polenta (you can find this in the Italian food section of most supermarkets)
2 Tbs grated Parmesan Romano cheese blend
Olive oil spray

Heat the oven to 450 degrees.

Heat a non-stick skillet and spray with olive oil from an oil mister.  If you don't have an oil mister you can use cooking spray.

Remove casings from sausage and add to skillet.  Brown sausage and break up sausage with a spatula until cooked through, about 4 minutes.

Slice polenta into thin rounds about 1/8 inch thick.  Spray a baking sheet with olive oil from an oil mister or use cooking spray.  Add polenta rounds to the baking sheet.  Spray rounds with oil and top with Parmesan Roman cheese blend.  Bake polenta rounds for 15 minutes.

Slice Roma tomatoes lengthwise and then into small pieces.  After sausage is fully cooked add tomatoes to the pan and cook 2 minutes.

Add spinach to the pan and cook 2 more minutes.

Top 3-4 polenta rounds with sausage mixture and enjoy.

Better option-add one element of either organic sausage, organic spinach or garden/farmer's market tomatoes.

Best option-add multiple elements of organic sausage, organic spinach and garden/farmer's market tomatoes.

Tonight's Best dinner pictured above included organic sausage, organic baby spinach and Roma tomatoes grown in our backyard.  You can whip this up in about 25 minutes too!

Friday Favorites April 7: Joy in Birthdays, pedicures, clothing, accessories

Today I am linking up with ErikaNarci and Andrea for Friday favorites and sharing with you the things that I am finding Joy in this week.

1. Birthdays: My birthday was this week as was my mom's. Running Daddy loaded me up with Barre 3 classes and got me this super cute Barre 3 shirt.

Running Daddy picked me up the Trader Joe's gluten free mini cupcakes because he knows how much I like them.  They are really moist and don't have any after taste like a lot of gluten free baked goods.  Had to try both the vanilla and chocolate just to make sure....

2. Return of my favorite Bravo shows: This week Running Daddy and I were counting the days and hours until the return of Southern Charm
 descendantsnet GIF
and Real Housewives of New York.

Running Daddy and I love our Bravo, especially Southern Charm.

3. Spring Nail Color: Spring is here and it's time to lighten up on our fingers and toes.  I am wearing Bangle Jangle in this photo and I just love it.

Other great Essie options include: Lilacism and Ballet Slippers

4) Spring Pants: I am not sure why I stopped buying pants from Loft and Ann Taylor, but they do fit me so darn well.  This past week I picked up these cute pants from Loft and Ann Taylor.
Bi-Stretch Skinny pant in black Marisa, I took a size 6.

Grasaille ankle pants.  I found similar ones in a persimmon and mariner blue color.  Since the Kate style is a little curvy, I also took a size 6.

5. All things pink: Pink is my favorite color...period. While you can wear pink year round, I love this time of year because I can bust out my pink heavy wardrobe including lots of Lilly Pulitzer.

This weekend I picked up these earrings  from my favorite little accessories store in my neighborhood.  It's all about fringe earrings this season and I needed something a little different and fun.

Pink seemed to be everywhere this week.  As I was meeting my sweet friend Miss K for coffee to talk work and life, I rounded the corner and saw this beautiful site:

It brought me such Joy.

So these are my favorites for this week.  This weekend brings a lacrosse game, dinner for my birthday, Palm Sunday Mass, and then a beautiful tea in my friend's garden that I look forward to every year.

What did you love this week?  Hearing from you all brings me such Joy!
