Smoky Turkey Sausage Chili

 


Hey Besties! Happy Monday. I know for some of us this is a holiday, so enjoy your time off if it is. If you have to work today, I hope your day is quiet and productive.

Today, I have a really Good recipe for you that is so easy, so comforting and really healthy. My lovely friends Sara and Holly from the blogging community are now hosting the Hello Monday link up and I decided to publish this recipe as part of their Monday Morning edition. As for this recipe, one thing that I decided to do over Christmas break was to make a soup, stew or chili along with a breakfast casserole or frittata every weekend. This has been especially helpful while we are working from home and most importantly during hockey season. There is something very calming about knowing you have Good, healthy food at home that you can just heat up during a busy week. 

One of the things that I especially love about making a soup or chili with sausage is that it adds effortless flavor. When you have sausage slow cooking in a soup, your hardly have to do anything else to it. I decided to put this to the test with a chili last weekend. This smoky turkey sausage chili cooked all day in the crockpot while we were at a late afternoon hockey game 70 miles away. Frankly, we had a local game that morning, so I pulled this chili together during the break and then we headed to the next game 70 miles away while it cooked. With a little planning, this chili came together easily. The Best part, this meal is very budget friendly.

Ingredients:


1 package of smoked turkey sausage
1 medium onion chopped
1 can of sweet corn, I used a mix of white and gold (drained) 
1 1/4 cups of salsa at your desired heat level
1 red pepper cored and diced
1 orange or yellow pepper cored and diced
2 Tbs. chili powder



Slice smoked sausage into small rounds and add crockpot. 

Chop your onion and peppers and then add those to the crockpot as well.

Add salsa and drained corn.

As a final step, add the 2 Tbs. of chili powder.



Give all the ingredients a Good stir. Place the lid on the crockpot and cook on low for 8 hours. Do lift not the lid or stir for two hours, you may stir occasionally after that during the cooking process.



I served this over steamed brown rice as a change up but you could just ladle into a bowl. This would be so Good with a crusty sourdough, salad and a glass of wine.

To make Better make one organic ingredient such as organic  sausage, organic peppers, organic salsa or organic corn. You can also serve over brown rice, a whole grain, as I suggested above. 

To make Best use multiple organic ingredients including organic  sausage, organic peppers, organic salsa or organic corn along with serving over brown rice.
