Busy Night Enchilada Bake



I think a lot of us are starting to be in that spot in our lives where winter sports are ending and the evaluations for spring sports is beginning. We have had this with the past two weekends with lacrosse and hockey.  This leads to a lot of cramming in things like eating into your weekend schedule. 

My Busy Night Enchilada bake can be pre-made or half pre-made for nights like this. I had about 20 minutes before we needed to leave for hockey on Sunday so I cooked the meat and then let it cool a little and popped it in the refrigerator to help save some time when we got home from the game. It was a Good call. You could also assemble the entire bake and then cook it when you get home. Hockey Guy can attest that it is also very Good reheated the next day. 


This enchilada bake is actually very healthy and packed with Good nutrients but will all of the yum of Mexican food. The Best part, if you can sautee an onion and ground turkey and open up cans, you can make this.

Ingredients:

1 tablespoon oil
1 small onion chopped
1 lb lean ground turkey
1 package taco seasoning
1/2 cup water
1 jar enchilada sauce ( I used the green one to keep it mild)
1 package small corn tortillas
1 can black beans drained 
1 package low fat shredded cheddar cheese




-Heat oven to 350
-Chop the onion
-Heat pan on medium heat and add olive oil
-Saute onion until translucent about 3 minutes
-Add in ground turkey breaking it up as it cooks and cook the turkey thoroughly. Drain off any excess liquid when cooked.
-Add in the taco seasoning and the water
-Let simmer until most of the liquid is gone and remove from heat.
-Drain and rinse black beans
-Add a thin layer of enchilada sauce to the bottom a lasagna dish
-Layer corn tortillas across the bottom of the dish slightly overlapping
-Add meat and black beans and a little more sauce
-Add another layer of tortillas and repeat meat, beans and sauce 
-Top with cheese
-Bake for 30 minutes and then let rest for 10 minutes

Top with non-fat sour cream and salsa if you would like.




Hockey Guy also said that he would like it even Better if he had chips with it. I happen to have two new bags in the house so he used the chips to scoop it all up.

To make Better-add one element of organic or farm raised turkey, black beans (cheapest option) or tortillas

To make Best-add multiple elements of organic or farm raised turkey, black beans (cheapest option) or tortillas

This one is going to be in our rotation for the next few months.
