Sausage and Pepper Pasta


I made this pasta last weekend in preparation for our school's big cross country meet. It's so Good but mostly it is easy and a whole meal in a bowl. This is a dish that I can also pull together in about 25 minutes or less on a weeknight. What could be Better than that? I posted this photo to Instagram and there were a lot of requests for the recipe, so here you go!

Ingredients:

1 package of Italian chicken sausage (I used sweet but you can use hot)

1 green pepper
1 red pepper
1 yellow pepper

4 Tbs Extra Virgin Olive Oil (divided)

1 lb pasta of your choice

1 clove garlic peeled and minced

salt
pepper

Grated Parmesan cheese

Remove sausage from casings. Slice the sausage into rounds and then cut the rounds in half, almost like making them into a half quarter size.

Remove seeds/core and cut peppers into strips.

Peel and mince garlic.

Bring water to a boil and then add salt and cook pasta as directed. Drain when finished.

Heat large saute pan on medium, add two Tbs of oil and then add garlic. Cook about two minutes until tender.

Add sausage and brown, about 4 minutes.

Add peppers and cook for about 6 minutes until tender.

Add remaining olive oil at the finish. Season with salt and pepper to taste.

Combine pasta and sausage pepper medley and add grated Parmesan to taste.

To make Better add one element of whole grain pasta, organic peppers or organic sausage. To make Best add multiple elements of whole grain pasta, organic peppers or organic sausage.

Good cooking time management tip: Prep sausage and peppers the night or morning before and store in the refrigerator until ready to cook

Need a Good wine pairing for this dish? I would go with a rose or dry Riesling.
