Sausage and White Bean Soup


Today is Tasty Tuesday on The Blended Blog and it's Tuesday Talk with Erika and Ashley and this sausage and white bean soup is just the Best. With the temperatures all over the place here and almost everywhere this is the perfect healthy recipe. So let's bust out the crock pot and get cooking.

I made this soup one of weekends right after New Year's when the temperature totally dropped. Running Daddy went out for a long run and when he came back in he asked if there was soup available. I told him that it just went in the crock pot and that it would be several hours before it was ready. As this soup slow cooked, the house started to fill with really Good savory aromas. Running Daddy came asked in the afternoon and if the soup was ready...nope not yet!


Ingredients:

1/2 medium onion
2 large carrots
3 stalks of celery
2 Tbs. olive oil
1 package of smoked chicken sausage
32 oz. of chicken broth
1 tsp. Italian seasoning
1/4 cup dry white wine 
14 oz. can of cannellini beans

Grab your crock pot from where ever you store it! Mine is kept in the laundry room.

Cut sausage into rounds and then cut again so they look like a half of a quarter. Quickly brown the sausage in oil and then set aside. I used a chicken apple chardonnay sausage from Trader Joe's and it was awesome for this recipe.



Chop celery, carrots and onion and place in crock pot. Add sausage and seasoning. 



Add wine and chicken broth and cook in the crock pot for 8 hours on low. Do not lift the lid for the first two hours.

Warning, this is going to start to smell really Good. Honestly, Running Daddy kept coming by the kitchen to ask when it would be finished.

Once the soup is finished in the crockpot, drain and rinse the beans.


Stir beans into the soup and enjoy.



Because this soup is packed with protein and vegetables, it is a complete meal in a bowl, but this also goes really Good with a buttery Chardonnay, beautiful salad and a crusty bread.

To make Better add one element of organic chicken sausage, chicken broth, beans or farmers market/organic vegetables. To make Best add multiple elements of organic chicken sausage, chicken broth, beans or farmers market/organic vegetables.
